The Cellar

The winecellar is equipped with up-to-date technology. Here the grapes, ripe from our vineyard, undergo modern techniques so that the finest quality wines are obtained.
During this process alcoholic fermentation of “must” occurs. This takes place in stainless steel containers with temperature control systems allowing for the regulation of fermentation.
Then the new wines undergo malolactic fermentation which improves their stability and bouquet.
Once the malolactic fermentation is over the wines are transferred to the aging cellar. Here there are 30 hl Slavonian oak barrels and French oak barriques of 225 and 500 litres.
Our wines remain in this zone for 12-24 months where they reach complete maturity before, again, being transferred into the stainless steel from where they will be prepared for bottling.
