Grapes: Trebbiano Toscano 70%, Malvasia Bianca 30%.
Harvest: by hand into crates, starting in the first ten days of October.
Vinification: soft pressing, racking of the must and temperature controlled fermentation.
Maturing: on fine lees for 4 months.
Maturing in the bottle: at least 3 months.
Tasting notes: Straw coloured with golden flecks. Bouquet: fresh tasting, flowery (yellow and white flowers) mixed with scents of tropical fruit, almonds and white peach. Intense sensations of balsamic and minerals. Sweet tasting, soft, fresh, fruity with a long balsamic aftertaste.
Serving suggestions: salmon au gratin, octopus and potato salad, deep fried fish.
Alcohol content: 13% Vol.
