Grapes: 100% Sangiovese
Harvest: by hand into crates, starting in the last ten days of September.
Vinification: soft pressing, racking of the must and temperature controlled fermentation.
Maturing on fine lees for 4 months.
Ageing: In stell tins with the noble lees for 6 months.
Maturing in the bottle: at least 3 months.
Tasting notes: Raspberry red colour with intense pink reflections. Bouquet sweet fresh with hints of white flower and dog rose, fruity raspberry and strawberry mixed with balsamic and mineral undertones. Sweet tasting, fresh, velvety with a long fruity sweet and mineral aftertaste.
Serving suggestion: Tuna steak, cod livornese, “cacciucco” fish stew.
